Tuna and swordfish skewers with lemon olive oil and chilli
Ingredients (10 pax)
Skewers:

700g Tuna, in cubes 
700g Swordfish, in cubes
400g Courgette, in cubes
200g Leek, in slices 
Traditional sea salt (to taste)
Ground black pepper (to taste)
Extra virgin olive oil (to taste)


Flavoured olive oil: 

1dl of extra virgin olive oil
0.3dl of lemon juice
1 Lemon zest
1 Chilli 
Traditional sea salt (to taste)
Preparation (10 pax)
Prepare the skewers with 3 pieces of fish interspersed with 2 pieces of courgette, season it with olive oil and salt. Core in the non-stick Yumi grill along with the slices of leek. 
Emulsify all the ingredients and season the skewers with the emulsion.
